Ilish Panikhola requires very less ingredients. So this recipe can be made at any time if there is some hilsa fish at your home. The taste of hilsa / Ilish Panikhola is enhanced by eating it with hot rice.

Cut onions in slices. Add sliced onions in a kadhai, add salt and 1/4 cup of mustard oil also , Mix everything together well for 5 minutes until onions release moisturiser , Add 2.5 cups water, place fish pieces on the bed of onions, Add slit green chilies, Place the kadhai on gas stove, switch on the gas , Cover and cook for 10 minutes , Open the cover after 10 minutes, drizzle some mustard oil, Serve with hot steamed rice .
