Golap Pithe / Golap Pitha (গোলাপ পিঠে / রোজ পিঠা )

Makar Sankranti is a major harvest festival of India. In West Bengal , we call this harvest festival ‘Sankranti’ or ‘Poush parvan’. It falls on every year 14 or 15 thJanuary. On this auspicious  occasion , Bengalies make their own traditional , aristocrat sweet ‘Pitha’or ‘Pithe’. Today I am going to share the recipe of Golap Pitha .

In Bangladesh and West Bengal, pitha is very popular. People make pitha during the winter season. We enjoy this with winter special fresh khejurer gur or date palm Jeggery. Some of the most common pithas are Patisapta, Bhapa, Dudh puli, Gokul, Golap Mug pakon, Nokshi Pitha and many more . The main ingredients of it are flour, rice flour, coconut , milk and ‘khejurer gur’ (date palm jaggery). We make some pitha at any time of the year wheras some pitha which we make during harvest festival . ‘

This Pitha is very popular in Bangladesh and West Bengal. In Bengali, ‘golap’ means rose, it’s rose shaped sweet. made with flour or maida , rice flour and milk.

Ingredients

Ingredients for fried Golap Pitha/Pithe

  1. Maida – 1 cup
  2. Rice Flour – 1 cup
  3. Ghee – 1teaspoon + 2tablespoons
  4. Milk – 2 cups
  5. Vegetable Oil – 2 cups
  6. Salt – 1 pinch
  7. Small lid or glass – 1

Ingredients for Sugar Syrup

  1. Sugar – 1 cup
  2. Water – 1/2 cup
  3. Crushed cardamom – 1 teaspoon
  4. A thin lemon slice – 1

Instructions

Method Of Making Fried Pitha

  • Add flour and rice flour in a bowl.
  • Set a non-stick pan to heat at medium.
  • Add 2 cups milk, bring it to boil, when the milk will start boiling add 1 teaspoon ghee. Stir till milk gets warm and ghee melts.
  • Add flour and rice flour. Keep stirring till it becomes dough.
  • Transfer this mixture in a wide plate. Knead it for 5 minutes till dough becomes smooth.
  • Add 2 teaspoons ghee and mix with dough to make the dough smooth.
  • Cover with a lid and let rest for 30 minutes to 1 hour .
  • Take a ball sized dough.
  • Sprinkle some flour, place the dough on flour, roll it out like a chapati or roti.
  • Roll it gently as much as you can.
  • Gently press it with small glass lid or bowl to get small circles, do this process with remaining dough.
  • Take little dough, roll it out to make center petal of rose.
  • Now overlap three medium sized dough circles.
  • Gently press it in a center using finger to make a small hole.
  • Place the center petal in this small hole.
  • With the knife, mark three cuts.
  • Carefully lift a triangle and fossil around the center petal.
  • Do this process with remaining dough.
  • Keep wrapping each triangle around the center petal to get full bloomed rose.
  • For half bloomed rose, place four dough circles one after another joined. 
  • Press in the center from top to bottom.
  • Roll it out gently from top. 
  • Cut them into equal length with a knife, now you will get two half bloomed roses, separate the petals little bit.
  • Deep fry roses on low flame until golden brown.
  • Remove from heat and keep them aside. 

How To  Make Sugar Syrup

  • Take a vessel, add 1 cup sugar add 1/2 cup water.
  • Add few crushed green cardamom.
  • Add a thin slice of lemon to avoid crystailization.
  • Now mix everything together, when bubblres will start appearing, switch of the gascover and keep aside .

Final Procedure

  • Soak the fried roses for about 2 to 3 mintues.
  • Take out the roses on to a plate. Enjoy with your loved ones!!
