My family and I were suffering from fever during Christmas holidays. Usually we go somewhere nearby for few days. My daughter and I bake together a variety of cakes, cookies all over the Christmas holidays. This time we could do nothing for the physical ailment. I felt bad for my daughter, all her friends were having fun and she was lying in bed. By the grace of God we all are fine now. Although I bake through out the year, but personally I love to bake during this winter time. We can not think of Christmas without ginger cookies. My husband brought some date palm jaggery, so I thought I would use jaggery instead of sugar to make cookies. So I baked Ginger Jaggery Cookie to welcome New Year. The combination of jaggery with ground cinnamon, ground ginger, and nutmeg make this cookie more delicious.
