To make this recipe, choose the fresh skinout fish fillets, frozen is also fine but make sure it is thoroughly defrosted and dried with kitchen towel first. Traditionally British people use Cod, Pollock, or Haddock for the fish. In India, you can use Basa,Tilapia,Bhetki or Barramundi fish to make this recipe. I used Bhetki fillet which is a very soft fish and takes no time to cook. Mainly in Britain,people use beer to make the batter, if you can you can replace beer with soda water. Sunflower oil-2 cups for deep frying, 4 medium sized white fish fillets(skin off), Plain flour-1 cup + 4 tablespoons for dusting, 1 cup chilled soda water, 2 teaspoons baking powder, Salt to taste, Potatoes -250 grams ( for fries ) Mix 1 cup flour,chilled soda water,baking powder and salt in a bowl,whisk it very well with hand whisker or fork until well combined, cover the bowl with cling film or airtight lid and keep this batter in the fridge for 2 hours. Wrap fish fillets with kitchen towels for 30 minutes. Sprinkle little salt and black pepper on fish fillets and rub each side of fish fillets very well. Take out the batter from fridge. Take 4 tablespoons flour in a wide plate, coat each fillet in a little of the flour,then dip into the batter and allow any excess of drip off. Heat oil in a frying pan, add fish pieces holding one side into the pan and fry on medium flame until golden brown, when one side is browned, flip the fish and cook the other side until golden brown. Remove the fish pieces from heat and keep them on absorbent paper.Serve the batter fried fish fillets with the chips , tartar sauce and lemon wedges. Serve the batter fried fish fillets with the chips , tartar sauce and lemon wedges.If you do not have tartar sauce then you can use mayonnaise also. Cut the potatoes into 1/2 inch strips, Boil the potatoes in a big pan of salted water for 4 to 5 minutes, Drain through a strainer, let them be dry. We will fry chips before serving. Now fry the chips in the oil that the fish fillets were cooked until golden colour.When the chips are cooked ,drain them on kitchen paper,season with salt. Keep the batter bowl in the refrigerator betwen frying of two batches of fried fish, or you can put the batter bowl on a ice cubes fiiled bowl. Make sure the batter should be chiled before dipping the fish into it.
