To make this sweet we need corn flour, sugar, ghee, water and nuts. Halwa is a very popular and easy to make sweet in India. Mainly we make halwa using sooji or semolina. Unlike other famous halwas, the karachi halwa is not grainy in texture. This halwa is actually chewy type. We make this delicious sweet specially for some occasion or Indian festival like diwali, rakhi, nabratri. We can store it in an air tight container in fridge for many days because of longer shelf life compared to other indian sweets. It is avialable with a variety of colours including lemon yellow, orange, red and pinkish. Adding colour is optional, just to make this dish more attractive. Here I did not use any food colour. I used Hershey’s strawberry syrup to make this delicacy more beautiful. The main ingredient of this halwa is corn flour. This white colored corn flour is called as corn starch in western countries. Corn Flour Mixture 1/4 cup Corn flour / Corn starch 1 cup Water Other Ingredients 1 cup Sugar 3/4 Water 1 teaspoon Lemon Juice 4 tablespoons ghee / clarified butter 1/4 teaspoon cardamom powder / elachi powder 2 tablespoons Hersheys Syrup 5 Almonds, chopped for garnish INSTRUCTIONS CORN FLOUR MIXTURE RECIPE: Add corn flour and water gradually in a large bowl, mix well with a whisker without forming any lumps, keep aside. In a non-stick pan add sugar add water, allow the syrup to boil. When syrup will be starting to boil, pour corn flour mixture slowly into the boiling sugar syrup, stirring continuously on low flame. Once the corn flour mixture starts to thicken, add one teaspoon of lemon juice, keep stirring till the mixture thickens completely. Now add one tablespoon ghee, and mix continuously till all the ghee is absorbed, again, add another one tablespoon ghee and continue to mix till it turns glossy, do this process again until 4 tablespoons ghee will be added. When mixture will start turning transparent and silky. releasing ghee from sides. add hershyes syrup, cardamom powder, mix well. Remove the pan from gas,continue to mix till mixture will start to form a lump. Cover a rectangle or square pan with cling film ( optional ). Transfer the mixture to a rectangle or square pan, sprinkle some chopped almonds on top and rest for an hour. Cut to a square shape and serve.
